Publication: "Description of valuable must apple varieties"
On an increasingly liberalized market, the supply of high quality, local must is an important asset of Swiss cideries. For a balanced, high quality must, acidic must apple varieties are required to make up for the sugar-rich must from dessert apples. Extensive orchards with trees on standard rootstock also play an important role in biodiversity and significantly shape the landscape of some regions in Switzerland.
In order to enable cideries and fruit producers to adapt their choice of varieties to today's high requirements, reliable decision-making principles are needed. The identification of suitable fruit varieties (for the criteria see chapter 2 on page 6) is the aim of three projects carried out by Agroscope in Wädenswil: SOFEM (2008-2011), HERAKLES (2012-2015) and HERAKLES Plus (2016-2018). The projects examined both known and new apple varieties for their susceptibility to fire blight. The results of the susceptibility testing for Marssonina disease still need to be verified and will be included in the next update of this brochure. Furthermore, the quality of the juice and technological suitability for processing were determined and surveys on production and growth behavior were carried out. The most suitable fruit varieties from the projects are described in detail in this brochure.
