Bruising - A damage, that gets under the skin

External quality deficiencies of the apple, such as bruises, represent a widely-spread problem for the cultivation and for the marketing of apples. Bruises reduce the market quality and the commercial value of the fruit significantly.
This article proposes the following measures to prevent bruises:
- The harvest workers should be trained. This way, they will know what technique to use when touching the fruits, how to separate the apples from the tree and how the fruits should be put into the bulk bins.
- In the case of varieties susceptible to bruises (such as Golden Delicious or Cripps Pink/Pink Lady®), harvest in the early morning or at wet or rainy conditions should be avoided.
- In addition, susceptible varieties should be treated carefully during the sorting-process and during the transport.
- In order to prevent bruises which could occur during the sorting, the refrigeration cells should be opened for some time before the sorting for aeration. This leads to the reduction of the turgor, predominant in the plant cells. This measure is only necessary if the fruit should be marketed early.
