The ideal harvest point is when the apples are externally completely mature. However, they should not be ready yet for the consumption as the inner quality has not developed yet. The apple continues to ripen after harvest and will develop a good inner quality during storage. If the harvest occurs too early, however, the apple will not be able to gain the expected quality.
